Olive Garden is one of the hardest places to eat out with diabetes, and not because the food is unusual. The portions are big, the breadsticks keep coming, and the pasta is the default. Olive Garden publishes a full nutrition listing with carbs, fiber, and sugar for most of the menu, so you can plan your order instead of guessing. This guide pulls the numbers that matter into a few tables, shows how much a handful of choices changes the total, and lists the questions worth asking before you sit down.
Quick answer: At Olive Garden the carb total is set by four things: the pasta, the breadsticks, the drink, and dessert. In the official listing, the Herb-Grilled Salmon has 9 g of carbs and the Grilled Chicken Margherita has 15 g, while a dinner-size Chicken Parmigiana has 80 g, and each breadstick adds about 25 g. The same restaurant can produce a meal of roughly 45 g or one of over 200 g. This is general education, not medical advice. Ask your care team what carb range fits you.
About the numbers in this guide
Olive Garden’s own U.S. nutrition listing is a downloadable PDF titled “Nutrition Information (U.S. Restaurants, excludes Hawaii).” Every figure in the tables below comes from it. You can find it by searching for Olive Garden’s nutrition PDF. The copy we used is hosted on Olive Garden’s Canadian site, covers U.S. menus, and carries a footer code of 120125 that we cannot decode, so we cannot tell you its exact date. The listing says values are as served and can vary by location, season, and substitutions.
A few cautions about how we read it. The tables were transcribed with an automated page reader, not copied by hand, so we cross-checked one item against a second source. That check turned up a conflict: FastFoodNutrition.org, a third-party database, lists the Herb-Grilled Salmon at 460 calories and 8 g of carbs, while the official listing shows 610 calories and 9 g. The carbs are close, the calories are not, and we went with the official figure. Specials rotate, regional items such as the Salmon Coho and the Tuscan Pork Chop are not everywhere, and the listing does not say which entrees come with a side or a soup or salad. Always confirm in the Olive Garden app or ask your server.
Soups, salad, and breadsticks
This is the part of the meal that arrives first and can be refilled. Per serving, the numbers are modest. The risk is volume: a single breadstick is about 25 g of carbs, so four of them come to 100 g.
| Item | Calories | Carbs (g) | Fiber (g) | Sugars (g) | Protein (g) |
|---|---|---|---|---|---|
| Breadstick with garlic topping (1) | 140 | 25 | <1 | 1 | 4 |
| Breadstick, plain (1) | 130 | 25 | 1 | 2 | 4 |
| Minestrone soup | 110 | 17 | 4 | 4 | 5 |
| Pasta e fagioli soup | 150 | 16 | 3 | 4 | 8 |
| Zuppa Toscana soup | 220 | 15 | 2 | 2 | 7 |
| Chicken & gnocchi soup | 230 | 22 | 1 | 4 | 11 |
| Stellini soup (regional) | 200 | 22 | 1 | 2 | 9 |
| Salad with signature Italian dressing | 150 | 13 | 2 | 4 | 3 |
| Salad without dressing | 70 | 11 | 2 | 2 | 2 |
| Italian dressing, 1 fl oz | 80 | 2 | 0 | 2 | 0 |
| Low-fat Italian dressing, 1 fl oz | 30 | 2 | 0 | 2 | 0 |
Two details stand out. The salad with dressing has 13 g of carbs, and removing the dressing only takes that down to 11 g, because the salad itself carries most of that. The dressing adds 2 g per fluid ounce, but the calories jump from 70 to 150, which is a different problem. Among the soups, minestrone is the lowest in carbs at 17 g and has the most fiber at 4 g, while the chicken and gnocchi and the stellini are the highest at 22 g, with only 1 g of fiber each. Serving sizes for the soups are not stated in the listing, so a larger bowl will mean larger numbers.
Entrees with the fewest carbs
If you want a main course that does not center on pasta, the listing has a handful of choices. These are the entrees from the official PDF with the lowest carb counts, plus a plain grilled chicken side for reference.
| Item | Calories | Carbs (g) | Fiber (g) | Sugars (g) | Protein (g) |
|---|---|---|---|---|---|
| Grilled Chicken Margherita | 650 | 15 | 5 | 5 | 65 |
| Herb-Grilled Salmon | 610 | 9 | 4 | 3 | 45 |
| Herb-Grilled Salmon Coho (regional) | 510 | 9 | 4 | 2 | 50 |
| Tuscan Pork Chop (where available) | 640 | 38 | 5 | 5 | 57 |
| Stuffed Chicken Marsala | 1090 | 53 | 6 | 9 | 72 |
| Shrimp Scampi | 490 | 52 | 4 | 5 | 29 |
| 6 oz sirloin | 980 | 49 | 2 | 3 | 57 |
| Grilled chicken, side | 130 | <1 | 0 | 0 | 26 |
The Herb-Grilled Salmon (9 g) and the Grilled Chicken Margherita (15 g) are the clear low-carb entrees on this list. Shrimp Scampi looks light at 490 calories, but it still has 52 g of carbs, probably from the pasta, though the listing does not break that out. The Stuffed Chicken Marsala and the sirloin carry 53 g and 49 g, which is more than you might expect from a meat dish, and the listing does not say how much of that is a side or sauce. If you order one of these, ask what it comes with.
Pasta and baked entrees: dinner vs lighter portion
Olive Garden lists a lighter-portion version of many pasta dishes. The tables below put the dinner portion next to the lighter portion for the same dish, so you can see what the smaller size saves.
| Dish | Dinner cal | Dinner carbs (g) | Lighter cal | Lighter carbs (g) | Carbs saved |
|---|---|---|---|---|---|
| Chicken Parmigiana | 1020 | 80 | 630 | 61 | 19 g |
| Fettuccine Alfredo | 1220 | 78 | 920 | 58 | 20 g |
| Spaghetti with meat sauce | 640 | 85 | 480 | 64 | 21 g |
| Spaghetti with marinara | 490 | 83 | 370 | 63 | 20 g |
| Lasagna Classico | 940 | 61 | 500 | 33 | 28 g |
| Five Cheese Ziti al Forno | 1170 | 98 | 630 | 57 | 41 g |
| Eggplant Parmigiana | 1070 | 108 | 660 | 75 | 33 g |
| Cheese ravioli with marinara | 750 | 63 | 440 | 38 | 25 g |
The lighter portion cuts carbs by 19 to 41 g on these dishes, which is a real change but not a small meal. The lightest pasta option in the lighter-portion list is the Lasagna Classico at 33 g, and the largest dinner listing in the table is the Eggplant Parmigiana at 108 g. Some entrees are far bigger than anything in this table. The Chicken Alfredo with crispy chicken has 106 g of carbs, the Chicken Tortelloni Alfredo has 95 g and 1,980 calories, and the Tour of Italy has 99 g. The Chicken Alfredo with grilled chicken is 79 g, which shows how much of the total comes from the pasta rather than the chicken.
Sides
| Item | Calories | Carbs (g) | Fiber (g) | Sugars (g) | Protein (g) |
|---|---|---|---|---|---|
| Parmesan garlic broccoli | 150 | 8 | 3 | 2 | 5 |
| Mashed potatoes | 200 | 27 | 3 | 1 | 4 |
| Meatballs (3) | 520 | 11 | 4 | 3 | 24 |
| Italian sausage (2 links) | 510 | 6 | 2 | 4 | 27 |
Parmesan garlic broccoli (8 g) is the lowest-carb vegetable side in the listing. Mashed potatoes are 27 g. The meatballs and sausage are low in carbs but heavy in calories, and the listing counts them as a side, so they are not free.
Desserts
| Item | Calories | Carbs (g) | Fiber (g) | Sugars (g) | Protein (g) |
|---|---|---|---|---|---|
| Tiramisu | 470 | 54 | 0 | 35 | 6 |
| Strawberry cream cake | 540 | 69 | 2 | 47 | 9 |
| Black Tie Mousse Cake | 750 | 76 | 4 | 59 | 9 |
| Sicilian cheesecake with strawberry topping | 730 | 78 | 2 | 63 | 12 |
| Apple breadstick pudding (where available) | 570 | 91 | 2 | 62 | 9 |
| Chocolate lasagna | 980 | 116 | 6 | 86 | 13 |
| Warm Italian doughnuts | 810 | 119 | 6 | 25 | 20 |
| Mint candy (1) | 25 | 3 | 0 | 2 | 0 |
The sugar column is the thing to read here. Tiramisu has 35 g of sugar and 54 g of carbs, which is the lightest full dessert on the list. The Black Tie Mousse Cake has 59 g of sugar, and the Chocolate Lasagna has 86 g of sugar. Adding chocolate sauce adds 48 g of carbs and raspberry sauce adds 51 g. If you want a taste, a shared dessert with several forks changes the numbers considerably.
Drinks
| Item | Calories | Carbs (g) | Fiber (g) | Sugars (g) | Protein (g) |
|---|---|---|---|---|---|
| Diet Coke or Coke Zero, fountain | 0 | 0 | 0 | 0 | 0 |
| Coke, fountain | 140 | 39 | 0 | 39 | 0 |
| Sprite, fountain | 140 | 38 | 0 | 38 | 0 |
| Classic lemonade | 170 | 43 | 0 | 42 | 0 |
| Iced tea, Bellini peach-raspberry | 80 | 18 | 0 | 17 | 0 |
| Iced tea, mango-passion fruit | 100 | 26 | 0 | 24 | 0 |
| Limonata, desert pear | 240 | 60 | 0 | 57 | 0 |
| Tomato juice | 90 | 19 | 4 | 13 | 4 |
| Orange juice | 230 | 51 | 0 | 45 | 4 |
The drink is the easiest swap in the whole meal. A fountain Coke is 39 g of carbs, a classic lemonade is 43 g, and the Limonata is 60 g. Diet Coke and Coke Zero are 0 g. The listing gives no serving sizes for these drinks, so we do not know how large a glass is, and refills multiply the number. The listing also includes coffee, tea, and water, which we left out of the table.
A worked example: three meals at the same table
Here is how the numbers add up. The carb values come straight from the tables above. Meal A is a common order. Meal B swaps to the lighter portion and a zero-sugar drink and skips dessert. Meal C is built around the grilled chicken.
| Meal | What is on the table | Carbs (g) |
|---|---|---|
| A: the usual | House salad with dressing 13 g + 2 breadsticks 50 g + Chicken Parmigiana, dinner 80 g + Coke 39 g + Tiramisu 54 g | 236 |
| B: lighter portion | House salad with dressing 13 g + 1 breadstick 25 g + Chicken Parmigiana, lighter portion 61 g + Diet Coke 0 g | 99 |
| C: grilled chicken | Minestrone soup 17 g + House salad with dressing 13 g + Grilled Chicken Margherita 15 g + Diet Coke 0 g | 45 |
Meal A comes to 236 g. Meal B comes to 99 g, which is 137 g less. Meal C comes to 45 g, which is 191 g less than Meal A. The only things that changed were the portion, the drink, and whether dessert was added. These totals use one serving of each item, so every extra breadstick adds about 25 g, and a second round of salad adds 13 g. We did not include any side that might already come with an entree, because the listing does not say which ones do.
Common mistakes
- Counting the bread as free. Unlimited breadsticks are about 25 g each. Decide how many you want before the basket arrives, and ask the server to take it away once you have had them.
- Treating the salad as the safe part. It is lower in carbs than the pasta, but 13 g with dressing is real, and refills add up.
- Ordering the dinner portion by default. The lighter portion saves 19 to 41 g in our table, and it is on the menu for many dishes.
- Forgetting the drink. A lemonade or a fountain soda can equal a side of pasta.
- Assuming the “healthy” name means low carb. Shrimp Scampi has 52 g of carbs.
- Not planning for leftovers. A general portion tip many people use is to ask for a to-go box when the food arrives and pack half before you start eating. It is a habit, not a medical recommendation, and it works for any restaurant with large servings.

Frequently asked questions
How many carbs are in an Olive Garden breadstick?
According to Olive Garden’s U.S. nutrition listing, a breadstick with garlic topping has 25 g of carbs and 140 calories, and a plain breadstick has 25 g and 130 calories. Because the basket is refillable, the real total depends on how many you eat.
What is the lowest-carb entree at Olive Garden?
In the official listing, the Herb-Grilled Salmon has 9 g of carbs and the Grilled Chicken Margherita has 15 g, the lowest of the dinner entrees. Ask what each one comes with, since the listing does not say which sides are included.
Is the soup at Olive Garden a good choice?
The soups run from 15 to 22 g of carbs per serving in the listing. Minestrone has 17 g and the most fiber at 4 g. The listing does not give serving sizes, so a bigger bowl means bigger numbers.
How many carbs are in the Olive Garden salad?
The salad with signature Italian dressing has 13 g of carbs, and the salad without dressing has 11 g. The dressing itself adds 2 g of carbs per fluid ounce but a lot of calories.
Does the lighter portion really save carbs?
Yes. Across the eight dishes in our table, the lighter portion had 19 to 41 g fewer carbs than the dinner portion. The Lasagna Classico, for example, drops from 61 g to 33 g.
Where do these numbers come from, and can I trust them?
They come from Olive Garden’s own U.S. nutrition PDF, transcribed with a page reader, with one item (the salmon) cross-checked against another source, which disagreed on its calories. Values vary by location and season, so confirm in the Olive Garden app before you order.
